I just finished off a feast of Greek Ribs and thought I'd share how I do them. I start by peeling the membrane off the back and then simmering them in salted water for about an hour. I mix up a sauce of equal parts lemon juice and oyster sauce and a healthy amount of garlic and oregano. Brush the sauce on the ribs and put them on the BBQ bone side down on indirect heat. Baste and turn the ribs a couple times. They'll be done in about 20-30 minutes. Enjoy! :)
ps. If you've got lots of time, do the simmering early and marinate the the ribs for a few hours before the BBQ.
