I have an older SONY dish that currently runs Direct TV and I want to convert it to Dish is this possible?
If it is can I change the LNB on the dish to convert it to a Dish 500, Dish Pro or Super Dish? Could someone also elaborate a bit on the differences.

Dish500 uses the same type lnbs but they have 2 lnbs, one for echo7 and one for echo6/8.. (110 and 119)
The only real advantage to superdish is locals and a few more sports and maybe 1 ppv. Not worth it in my opinion. I think they add linear lnb to the lnb soup mix. If its porn you want then search for bev sat@ 91.

The Dish500 which is essentially a dual LNB correct, how does it see 2 different satellites if it only uses a single dish? are the heads adjustable? will it mount on my old dish?

a 18" round direct tv dish is just like a dish 300, they have two adjustments, the angle (up/down) and the azimuth (compass, left/right swing) and are used to pick up one sat at a time.
the direct tv lnb is same as standard legacy dish lnb. you can use it to pick up one dish sat at a time, the 61.5, the 110, 119 and 148. also can pick up bev 82 or 91. to pick up two sats like with a dish 500 you would need two lnb and a sw21 to combine the signals into one sat coax feed. Also some of the newer lnb have the switch built in so a sw21 is not needed.
the dish 500 is slightly different shape and has 3 adjustments angle azimuth and skew (turns like a steering wheel) and is used to pick up 2 dish sats like 110, 119. or two bev like 82, 91. there maybe a little compromise in total signal from one sat but usually picks up two with reasonable siganl strenght success. it uses either two seperate lnb or the 2 lnb built into one unit to receive the signals from both the 110 and 119 at same time. the lnb are situated to sit with a certain angle and aimed to the focal point of the dish to receive the different sats at one point
the dish legacy lnb like the direct tv lnb will work with all dish receivers. whether used on a dish 300, dish 50 or a direct tv 18" round dish.
the dish pro lnbs only work with dish pro receivers (there is a dishpro adapter you can use inline to a dish legacy receiver to make it work with dishpro lnb)
the dish sats at 105 and 121 need a superdish because the super dish has 2 different lnb. the 105 and 121 use a fss ku style lnb. a superdish is used to pick up either the 105, 110, 119 combo or the 110, 119, 121 combo of sats.
the bev sats, ie: bell expressvu are at 82 and 91 and use a bev receiver to get them with a dish 300 for the main 92 or with a dish 500 for picking up both.
the yoke that holds the lnb head on the dish300 or dish 500 has a d shaped fitting, but you maybe able to affix it to your direct tv lnb arm which is retangular in shape where the lnb fitting connects to it. But you basicall would still need to be able to skew it to catch both sats with decent signal even if you got a dish lnb to fit to the end of it. not saying it's impossible but it sure ain't easy.
The easiest way is to buy a dish 500, with a Legacy Qaud lnbf head. That way you pick up the 110 and 119 with the dish 500 and the legacy quad has built in switch and can run 4 receivers. legacy (2700, 2800, 3700, 3900, 4900, 6000) or dishpro 301/ 501/508/510.

I've got a 301.10 IRD (dishpro correct?) and I've seen a few dishes posted for sale. How do I identify a "Legacy Qaud lnbf head"? The items I see come in 2 different fashion, an LNB that appears to be a single unit with both heads molded into it and the other looks like 2 seperate heads mounted on the same shaft.
What's the wiring arrangement for a single receiver?
Any good setup tips for a Dish500? I've read some posts where people were having issues?
