I like to use garlic (dried) mustard seed, corriander seed, pepper seed, salt (I like sea salt). 1 Tablespoon mustard seed, 1 Tablespoon Corriander seed, 1 tablesppon pepper seed, salt to taste (maybe start out with 2 teaspoons, 2 teaspoon in a tablespoon) Then garlic is up to you. I would use 2 tablespoons. Put in a pedistal or an electric grinder if you have neither then just usew the bottom of a jad and crush or grind to a poweder, does not have to be perfect. Then take a roast and run a knife crosswwise on the meant then crossways theother way. Rubb the powder you have made on the meat. The slits will grab take in the seasoning. and it will be on the outside. Anotehr good method is to rub olive oil on before or even after. You can throw it in the oven or on the grill like this, rotiseries are awesome. Just to add a little more to something like this I make sure it has olive oil on it ans heat a pan on the stove so it is hot. I put the roast in the pan and sear each side, not to cook any part of the inside but just to sear or crisp up the ouotside. Then I put it on the rotiserie or grill and finish cooking. When it is done let it sit for 15 to 20 minutes before slicing. ..... You can also use this as a steak seasoning. The misture of the corriander adds so much to the seasoning. Neverhad a complaint with this. I use this as a base for other seasonings and add other things to it.... Goodluck
