I got tired of buying little jars of salsa at 3 bux a pop, so I started playing with different recipes, and came up with this. You can serve it warm right out of the blender, or chill for several weeks. I like to use chipotle chiles, as they add a nice smoky flavor, but you can just use a regular jalepeno if you don't like chipotles.....
6 Roma Tomatos - Whole
1 Small Yellow Onion, peeled, cut into quarters.
3 Cloves Garlic - Whole, peeled.
1 Small can Chipotle peppers OR 1 whole stemmed jalepeno.
1 Handfull Cilantro leaves (to taste)
1/2 stalk celery - de-stringed, cut in small chunks
1/4 tsp black pepper
1 tsp salt
1 tsp sugar
Lime juice
Boil a large saucepan of salted water. Drop in the tomatoes, 3 of the 4 quarters of the onion, and garlic cloves. If you opted to not use chipotle chiles, drop the jalepeno into the water as well. Boil on medium for 6 minutes.
Put cilantro & celery in bottom of blender.
After the tomatos are finished cooking:
Put 4 of the 6 tomatoes, the cooked onion, garlic and chiles in a blender. Smash the tomatoes with a spoon to start them liquefying. Blend on low just untill the movement is smoth. Stop the blender, and add the rest of the tomatoes and the raw onion. Add the sugar, salt & pepper. Whirl at the slowest speed just untill the tomatoes are pulled under.
Add lime juice to taste, stirring only with a spoon.
