If a phone is said to be unlocked, all that means is that it can be used on ANY network, is this correct? I was thinking of getting an iphone but I am on Verizon.

Thats correct, when you unlock a phone, that allows it to be used on any compatible network. HOWEVER, the iphone only works with GSM networks (at&t, t-mobile, europe, etc) while the verizon network uses CDMA technology. So even if you were to unlock the iphone, it wouldn't work on the verizon network.
