If you have a DishPro 500 first off you need to edit your ini files, all the Horizontal's need to be changed to Vertical's. You do that via the following method:

Take this # 25600 - the Horizonal TP Frequency for example 12231 = 13369
You change the line that says 12231,H,20000,5/6 to say
13369,V,20000,5/6 ok.

The reasoning behind this, someone else can care to explain to you, I just plain know it works ok. I just edited a freshly made ini file from Lyngsat to verify all the TP's and it is updating as I type.
So, lets continue on to the relevant satellite settings in the LNB/DIseqc area in MT

For Echo7 you want the following if you have a DP500 and a single cable coming from it (which you do, DO NOT PUT SWITCHES INLINE OF THIS CABLE, IT WORKS FINE STRAIGHT SHOT FROM THE DISH):

Echo7: Diseqc CSW-LNB1 (Committed LNB Slot 1)
LOF: 11250000, SW: 1220000 LOF2: 11250000
Import the ini file you edited previously for Echo7 at this point, and check your settings again, make sure its all correct as I put it above.

Echo 6,8: Diseqc CSW-LNB2 (Committed LNB Slot 2)
LOF: 11250000 SW: 12700000 LOF2: 11250000
Import your inif file for Echo6,8 at this point, and check your settings again, make sure its all correct as I put it above.

Now, you want to pick either sat and select all TP's, and scan. I have a total of about 700 channels that just got pulled in (I'm sure some are mirrors, but thats not the issue really at this point ok).
