Smoked Meat
Been enjoying the new recipies. So heres one for you to try.
1 Large Roast (Pork,Beef,OR any wild game such as Deer,Elk,ect.) Marinade over night in solution of your choice,I like ones that use strong garlic and wor sause. Inject the meat with the marinade for more even flavor. Remove from fridge and cut small pockets in the roast and add a mix of onion and garlic into the pockets. Let the roast reach room temp before putting on the smoker. If you use one of the brikmans water smokers add a few cans of malt beer and a cup of sour mash whisky to the water pan. Replenish with more beer and whisky every few hours. Now what some consider strange I dont use wood in my smoker. I use nuts, for a mild smoke flavor I use Hickory or pecan,for a harher flavor I use black wallnuts and a few brazil nut. You can do this with gas or Char.. Just watch yor smoke and add more nuts as needed. Every fall our friends come over and I fire off my big smoker and we smoke our remaining deer and wild boar ,roast some quail and dove, tap a couple of kegs,And start a bonfire. I enjoy this more than any cruise or vacation I've ever been on.Hope you do to. ![]() |
